Power Up!

Last night Keith and I battled with a hill during our workout with Princeton Intervals.

Workout: 10 x .35 mile hill climb (jog back; no rest)

Total distance - 8.5 miles (including warmup and cool down)
Time - 1:13

Meg kept yelling out "POWER UP!" to encourage everyone as they ran up the hill.  I couldn't get this guy out of my head:

Good Delicious things happened in my kitchen yesterday, too. 
I made vegan (i.e. fish-free) sushi!

I have been wanting to do this for so long.  I buy veggie sushi on campus about once a week, and it costs $6.00 every time I do it.  I'm a cheap-o when it comes to food, so I'm always scrutinizing everything I eat at restaurants, figuring out how much it would cost for me to make the dish if I bought all the ingredients at the grocery store.  Well, the components of veggie sushi all together cost about $1.50.  I definitely can save a little and still have happy sushi time if I just make this at home.

What you need:
Carrots
Cucumbers
Avocado
Sushi rice (cook 1 cup of rice, then mix in 1 tbsp rice vinegar, 1 tbsp white sugar, and 1/2 tbsp salt--that's how the rice gets sticky)
Nori (seaweed wrappers; look in the international aisle)

Slice up your veggies.
Using a spatula, cover one side of the seaweed wrapper with rice.
Fill it up.
Roll it up.
Eat it up.
All gone!

This is a super fun meal to make.  It's light on the wallet and the calories, but a good way to get veggies.  Plus, you'll finally get to show off your chopsticks skills without having to go gluttonous on some Chinese takeout.

  3. I hit a hill during a run yesterday that almost got the best of me. I think hill work is so important, especially if you plan on hilly races!

    That sushi looks good! Was that your first attempt?

    1. Yes, that was the first attempt. Pretty good for the first time, I think! It's easy to healthy-fy it by using brown rice instead of white.

  4. I like that sushi recipe - I'm definitely making that - I've been avoiding sushi after reading about all the things that are being substituted for, but still sold as, salmon and tuna!
