Red Beans and Rice

The fast and formidable Erin of Erin Runs requested that I post the recipe for the red beans and rice that I scarfed down yesterday.

I'm seeking favor among the running gods, and since Erin is so clearly one of their favorites, I'm gonna give her what she wants!  (Check out her blog, she's pretty amazing!)

This recipe is great for many reasons.

First, it's cheap.  A pound of dried beans costs between $1 and $1.50, the onion and pepper will set you back another $2 or $3, rice is another $1 or $1.50, and though the cost of spices is hard to calculate... you should invest in them because it's definitely worth while.  So the whole meal ends up costs $10 maybe, and it will feed a family of four.

Second, the beans and rice together make a complete protein, so you don't have to worry that you are sacrificing your health.  Of course, adding some greens on the side wouldn't hurt.

And, third, it's a cinch to satisfy the non-vegans in your life by cooking up some andouille that can be served on top of these beans.  You don't have to contaminate your glorious vegan masterpiece, and they get to have their meats.  Everybody is happy!  (Additionally, you could just cook the sausage in the red beans if you are a meat eater.)

Last but not least, it's easy.  I don't like meals that require my constant attention right at the end of the day.  That's usually when I'm trying to catch up on stuff I didn't get around to doing or else it's when I'm just plain tired of paying attention to stuff.  With this meal, you can half-heartedly throw everything in a pot when you're still half asleep and then just leave it to simmer on its own. Then you open it up and the magic fills the air.

  1. Thanks for the recipe! I love slow cooker recipes lately. I usually always make black beans or lentils. For whatever reason, I am biased against red beans, but I should try! (I think I think of red beans as baked beans and I hate all the sugar in baked beans).

    1. I (finally) made it to the store to buy the ingredients.... and they were out of red beans!! I bought a bag of pinto beans. Do you think they will work??

    2. It will be a very different dish, but it will be delicious! Just don't mash any of the beans at the end. And if you have a can of diced tomatoes, you could throw it in. I loooove pinto beans.
